What is fresh cream?
Fresh cream, also known as whipped cream, is called cream in English and contains 30%-40% fat. This cream is a thick, flowing white liquid and is divided into two types: cooking cream and whipping cream, depending on its use. In particular, whipped cream is written as “whipping cream” in English, where “whipping” refers to its “whippable” property. After whipping, it is the decorative cream we often see on birthday cakes.
Fresh cream can be further subdivided according to the fat content. Fresh cream with a fat content of more than 36% is usually called high-fat cream or thick cream; and those with a fat content below this standard are called light cream.
Similar to butter, there are plant-based substitutes for fresh cream on the market. This vegetable fresh cream simulates the texture and appearance of animal fresh cream through artificial synthesis. Although its price is relatively affordable and its stability after whipping is better than that of animal fresh cream, its taste cannot be compared with real animal fresh cream.
