Vacherin’s production dates back about 200 years, but it wasn’t officially controlled until 1981, when the Swiss called the soft, washed-rind cheese Vacherin du Mont d’Or, and in local French shops it was known as Vacherin. Vacherin is made from pasteurized milk and has a rich, slightly sour taste. The cheese is almost liquid when ripe, it has a greyish-yellow blanched rind that must be removed before eating, this rare and luxurious cheese tastes like fondue. Vacherin is only produced from March 31st to August 15th each year.
