In principle there are three basic types of nougat. The first, and most common, is the white nougat (called “mandorlato” in Italian, “praline”), which is made from egg whites and honey. The second type is the brown nougat ( French is chocolate nougat), which is made without egg whites and has a firmer, crunchier texture. The third type is Viennese or German nougat, which is basically a praline flavored with chocolate and nuts (usually hazelnuts). Nougat is traditionally an aerated blend of sugar, egg whites, and nuts and/or fruit. The homemade variety looks very different than the type you find in the middle of the candy bar.
