Swiss Chocolate Mousse Recipe
Ingredients
A. 6 egg yolks, 3 whole eggs, 150g granulated sugar
B. 6 gelatin sheets
C. 600g chocolate, 600g fresh cream, 75g orange wine
D. 4 slices of chocolate sponge cake Decoration: cocoa powder
Production method
1. Put material A in a steel bowl, heat it in water and beat it until it is milky white.
2. Soak the gelatin in water until it softens, and heat it in water until it is completely dissolved.
3. Whip the fresh cream to about 60%, put the chocolate in a steel bowl, heat it in water until it melts, add the whipped cream and orange wine and mix well.
4. Mix steps 1, 2, and 3 together and mix well to make the mousse filling.
5. Take 2 8-inch cake models, put a piece of chocolate sponge cake in each as the base, squeeze an appropriate amount of mousse filling in step 4, then put in another piece of chocolate sponge cake, squeeze in the remaining mousse filling, smooth it out and put it in the refrigerator for about 3 hours. After taking it out, sprinkle with cocoa powder and cut each into 12 pieces.
