Ingredients
Recipe: 4 whole eggs, 100 grams of granulated sugar, 1/4 teaspoon of salt, 100 grams of low-gluten flour, 15 grams of milk, 15 grams of salad oil
Production method
1. Put the whole eggs and salt in a bowl, and add all the granulated sugar. Take another steel basin with water, place the bowl on it and heat it in water, and stir while heating. When it is heated to about 40℃, it can be removed from the heat.
2. Use an electric egg beater to continue to beat until the foam is smooth and uniform, then beat it slightly to make the foam more delicate and uniform. Use the egg beater to scoop it up in a fluid state. After the whole egg is beaten, immediately sift the low-gluten flour into the container, and use a rubber scraper to scoop up from the bottom to quickly mix the flour and egg paste until the flour and egg paste are completely uniform, that is, smooth and particle-free.
3. To prevent the batter from defoaming, mix the milk and salad oil, then take a little batter and mix it well to make it of similar consistency, then pour the ingredients back and mix it with the rest of the batter. Pour the mixed batter into the ungreased mold and bake it in a preheated oven at 170℃ for 25 minutes.
4. When the baking is almost done, the cake will shrink slightly, indicating that the batter is about to be baked. After the cake is out of the oven, it must be turned upside down and cooled immediately to prevent the cake from shrinking when it is cold. After the cake is completely cooled, you can use both hands to quickly press down the cake body along the edge of the mold to separate the cake from the mold.
