Materials

Egg cake body (8 inch square)
Unsalted butter 240g
Icing sugar 16g
Low gluten flour 160g
Corn starch 360g
1/2 teaspoon baking powder
4 eggs
Mango puree 40g

Layer
Digestive Cookies 30g
Baked honey 20g
Schumann natural green pigment amount (black or blue spare)

Black sugar juice
Baked honey 30g
Water 10g
Brown sugar / brown sugar 20g

Foam
Orange juice 40g
Gelatin powder 2g

Practice

Egg cake layer
① Cut the butter into pieces, soften at room temperature, lightly press up, and use an electric eggbeater to whitish and slightly swell, but not to the point where it is completely beaten, leaving room for the butter to be beaten when adding egg liquid, easy Oil-water separation.
② Add powdered sugar and beat evenly.
③ Eggs are added in two parts, after adding each time and stirring well, add the next time. If oil-water separation occurs at this step, it may be the result of the butter being passed in advance.
④Mix corn starch, baking powder and low-gluten flour evenly, add butter through sieve, and mix gently.
⑤Add mango puree and mix well.
⑥ Put the cake batter into the 8-inch square baking mold (the bottom and sides of the baking mold are covered with silicone oil paper to prevent sticking the mold) and smooth.
⑦Oven preheating Bake for 30 minutes at 170 ℃, let cool on the rack.

Green layer
①The digested biscuits are broken with a mixer, or you can crush them by yourself. The machine beats more delicately.
② Pour honey and mix well.
③Add green pigment, appropriate amount of black and blue, stir evenly, adjust dark green, let stand, and use.

Black syrup
① Pour honey, water and brown sugar into the milk pan.
② Bring to a boil until it becomes thick.
③ Pour into a bowl, let cool and set aside.

foam
① Fresh orange juice.
②Add the gelatin powder and mix well. Bring to a boil, turn off the heat and stir until the gelatin powder is completely melted.
③Pour it into the basin and use the electric eggbeater to make dense bubbles.

combination
① After cooling the cake, cut it into cake pieces the size of scouring pads.
②Roll the green biscuit into 1 ~ 2cm thin slices through the fresh-keeping bag.
③ Place the cake on it and cut out square pieces of the same size.
④Drag with the plastic wrap on the lower layer, cover the top of the cake, and stick it tightly.
⑤Prepare a plate, garnish some “syrup stains” with a spoon on the bottom of the plate, and place the cake on it.
⑥Decorate a little orange juice foam on the top to finish myself ~
