Chinese traditional pastry kumquat cake bars are popular in southern Fujian and Jiangnan regions. It is rumored that the earliest kumquat cake bars in southern Fujian were made from wild fruits on the mountain. It tasted like kumquat and the cake was pure white after it was made. Later, there were fewer and fewer wild fruits on the mountain. People used ordinary kumquats instead of wild fruits to make kumquat cake bars and added red yeast powder to mix them, so the kumquat cake bars became beautiful pink.
