Material

120g egg white
Sugar 100g
80g egg yolk
All-purpose flour 80g
Vegetable oil 20g
16g milk
Vanilla extract 5g
A pinch of salt

Step

① Spread butter on the pan, and stick parchment paper of suitable size on the bottom and around;
② Mix vegetable oil, milk, vanilla extract and salt evenly and set aside;
③ Start to beat the egg whites, add the sugar in three times, and beat until hard foaming;
④ Add egg yolk and stir evenly;
⑤ Sift in flour and mix well;
⑥ Take a small part of the batter and mix well with the mixture of step 2, then pour it back into the batter and mix well;
⑦ Pour into the mold, mark the surface with a bamboo stick, and shake out large bubbles;
⑧ Cover the lid on a low fire and bake for 50 to 60 minutes (be careful to wipe the rising water mist from the lower lid);
⑨ Poke the bamboo stick, take it out when it is basically not sticky, turn it over and put it in the pot, continue to heat for 10 minutes on a low fire;
⑩ Remove and tear off the baking paper after baking, let it cool and cut it for consumption;
