40g egg yolk
Sugar 50g
170g milk
Vanilla pod 1/6
Butter 155g
① Scrape the vanilla seeds and pods into the milk and boil.
② Add sugar to the egg yolk and stir well.
③ Pour the milk into the egg yolk, stir quickly, then temper and cook to thicken and sieve. Then cool down with ice water.
④ Add the melted butter to the egg yolk mixture 3 times, and stir well.
Step 3: Assembly
① Take out the baked cake base and cut it in half.
② Pour the cream sauce into the piping bag, then squeeze it on half of the cake base, smooth the cream sauce, and cover the other half of the cake base. Smooth the surrounding area.
③ Divide the assembled cake into two, sieve powdered sugar on the surface, and sift the cocoa powder on one corner to complete.
