How to Slice Chaource? Cheese Portioning Machines – Cheersonic

Chaource is a soft cheese made from cow’s milk in the village of Chaource, France. This cylindrical shaped cheese has a soft-ripened, creamy and a little bit crumbly, non-elastic texture. Surrounded by a white velvety rind, it’s ageing process lasts between 2 weeks to 2 months. Many people like to eat young Chaource when its rind is hardly formed whereas others eat after it attains full maturation. During its ageing time, the cheese has a bit salty, buttery and milky taste. Together with 25% fat, it also contains animal rennet.

Due to the large viscosity of the Chaource texture, the common blade cutting effect on the market is not good, the messy surface and the residue on the blade will not satisfy the customers or consumers. Chaource have become an increasingly popular food in the world market, and with the common needs of consumers, Cheersonic has helped many customers solve the cutting problems of soft cheese. The use of the ultrasonic technology is suitable to cut soft, creamy, sticky and multi-layer products as well as fresh and frozen products. Ultrasonic cutting technology is a progressive industrial technique that uses high frequency vibrations to cut through materials with precision. Using the high frequency vibrations of the sonotrode (blade), we can drastically reduce the friction between the product and the blade, allowing for superior quality cuts, even when processing delicate, soft or crumbly products. Minimum offcuts and at the same time rapid, variable, accurate and neat cuts – with smooth cutting edges. The shape of the cut product will only be modified a little. With innovative ultrasonic technique you will achieve best cutting quality!

About Cheersonic

Cheersonic manufactures the leading portioning equipment for bakeries producing fresh and frozen desserts. Since 1998 bakers have used Cheersonic machines to cut, slice and portion cheesecake, pie, layer cake, loaves, butter, cheese, pizza, sandwichs, and more. Cheersonic offers ultrasonic cutting solutions that support start-up bakeries and high production commercial facilities alike. Small standalone machines can be used in manual baking facilities and large inline robotic solutions aid in high speed production.

Cheersonic offers many ultrasonic slicing models, both inline and offline applications, with production speeds of 80 to 1,500 cakes or pies per hour.

Cheersonic’ latest offline introductions include ultrasonic cutting with or without divider inserts between each slice. This improves the quality of the cut and makes for a much better product presentation for the customer. In addition, robotic arm improves the speed, efficiency, and accuracy of the cutting process, producing professional looking products every time.
