Chocolate Nut Cookies
Ingredients
Nuts: 75g dark chocolate almonds, 65g hazelnuts, 45g pistachios, 40g pumpkin seeds, 30g syrup, 15g butter, 10g dark chocolate
Cookies: 220g low-gluten flour, 150g butter, 135g whipped cream, 70g icing sugar, 40g almond powder, 20g cocoa powder, 3g sea salt
Methods
1. Add syrup to butter and dark chocolate and stir over hot water.
2. Stir until melted, add dark chocolate almonds and hazelnuts.
3. Add pistachios and pumpkin seeds and stir well for later use.
4. Add icing sugar and sea salt to softened butter and beat.
5. Beat until the volume is swollen and the color is white.
6. Add room temperature whipped cream in batches and beat until smooth and delicate, then sift in low-gluten flour.
7. Sift in almond powder and cocoa powder and mix evenly.
8. Put it into a piping bag until there is no dry powder. Use a large flat serrated piping nozzle.
9. Squeeze the batter evenly into the baking pan one by one and put some nuts on the surface.
10. Preheat the oven and put it in the oven. Select the convection oven mode and bake at 155 degrees for 20 minutes. It will be fragrant and delicious!
