Cream cheese 110g
White cheese 100g
Milk 125g
Whipping cream 42% 15g
Unsalted butter 30g
Egg yolk 60g
Sugar a 20g
Low-gluten flour 12g
White grape juice 10g
Protein 42g
Sugar b 42g

Step:

① Add sugar a to the egg yolk and stir well. Then pour in low-gluten flour and mix well.
② Pour milk, whipped cream, and butter into a pot and boil, pour into the batter and stir evenly.
③ After sieving, temper and cook until thick, with stirring all the time.
④ Whisk cream cheese and white cheese in insulated water, then pour the batter into the cheese and stir evenly, and add white grape juice to mix well.
⑤ Beat the egg whites until they are whitish and foamy, then add sugar b in portions to beat.
⑥ Add the whipped egg whites into the batter and mix evenly.
⑦ Put a piece of cake base with a thickness of 1cm on the bottom of the mold surrounded by baking paper, then pour the batter and smooth it.
⑧ Pour hot water of about 50℃ into the baking pan, put it in the oven at 160℃ and bake for 60 minutes. The second half is heated to 200°C within 10 minutes to adjust the baking color.
*Using the water bath method can heat the cake more evenly. At the same time, the amount of steam is adjusted by opening the door multiple times so that it will not float, split or explode in the middle.
⑨ Take out the cake and let it cool to room temperature naturally, then it can be refrigerated in the refrigerator. When serving, top with honey.
