Banon Cheese Slice
Banon Cheese Slice – Cheese Fixed Weight Portioning – Cheersonic
Coming from the market-town of Banon, just north of Aix in southern France, Banon is a soft, unpasteurised cheese made from goat’s milk. Banon also known as Banon à la feuille is a very old, traditional cheese said to date back to the Gallo-Roman era. The cheese is wrapped in a case of chestnut leaves, held in place with raffia. Cheesemakers gather the leaves in autumn when they fall off the trees. Some producers dip the leaves and raffia in vinegar or eau-de-vie to impart a unique flavour to the cheese.
Banon have become an increasingly popular food in the world market, and with the common needs of consumers, Cheersonic has helped many customers solve the cutting problems of cheese. The use of the ultrasonic technology is suitable to cut soft, creamy, sticky and multi-layer products as well as fresh and frozen products. Ultrasound designates sound waves, which are moving with a frequency of 16,000 Hz or more. At this, the unit Hz describes the number of vibrations in one second. During the production process, the ultrasonic knife will be run through by a sound wave and translated into a mechanic vibration-a noticeable vibration. It vibrates depending on the frequency 20,000, 30,000 or 35,000 times per second (20, 30 or more kHz), which results in a maximum surface friction between the product and the ultrasonic knife. In this way, pressure-free cutting of products is possible and the deformation is minimised. Ultrasonic cutting technology is advanced. We quickly adjust the size of the machine blade and easily cut the cheese in the tray into squares or slices, which can be the size of the coin or the size you want.

About Cheersonic
Cheersonic manufactures the leading portioning equipment for bakeries producing fresh and frozen desserts. Since 1998 bakers have used Cheersonic machines to cut, slice and portion cheesecake, pie, layer cake, loaves, butter, cheese, pizza, sandwichs, and more. Cheersonic offers ultrasonic cutting solutions that support start-up bakeries and high production commercial facilities alike. Small standalone machines can be used in manual baking facilities and large inline robotic solutions aid in high speed production.
Cheersonic offers many ultrasonic slicing models, both inline and offline applications, with production speeds of 80 to 1,500 cakes or pies per hour.
Cheersonic’ latest offline introductions include ultrasonic cutting with or without divider inserts between each slice. This improves the quality of the cut and makes for a much better product presentation for the customer. In addition, robotic arm improves the speed, efficiency, and accuracy of the cutting process, producing professional looking products every time.
