Chestnut Mousse Cake

Ingredients:

  • Cake body: 38g milk, 38g corn oil, 14g sugar, 38g low-gluten flour, 10g Earl Grey tea powder, 14g corn flour, 80g egg yolk, 132g egg white, 5g sugar, a few drops of lemon juice;
  • Mousse body: 25g egg yolk, 25g water, 20g sugar, 4g gelatin, 75g mascarpone, 50g chestnut puree, 170g whipped cream, chestnut kernels as needed;
  • Chestnut cream: chestnut puree + whipped cream;

Method:
1. Stir milk, corn oil and sugar together until emulsified completely;
2. Sift in flour, stir in a zigzag pattern until there is no dry powder, pour in egg yolk and stir in a zigzag pattern until smooth smooth state;
3. Beat the egg whites until neutral, take 1/3 of the egg whites and mix with the batter;
4. Pour the mixed batter into the remaining egg whites and mix well;
5. Pour into a baking tray covered with oilcloth, smooth the surface, and bake in the oven at 160℃ for 21 minutes;
6. Make the mousse body: heat and beat egg yolk + sugar + water, add softened gelatin and mix well;
7. Mix the chestnut paste and cheese evenly, pour into the egg yolk liquid, and mix evenly;
8. Beat the whipped cream until thick, and mix with the cheese paste;
9. Pour into the mold of the chiffon base, sprinkle some chestnut kernels, cover with another piece of chiffon base, refrigerate until solidified, and finally demold and cut into pieces!
