Pumpkin Cheese Stuffed Soft European Bread
Ingredients:
Bread: 220g high-gluten flour, 30g low-gluten flour, 10g milk powder, 150g pumpkin puree, 55g ice milk, 20g sugar, 3g salt, 3g high-sugar dry yeast, 20g butter;
Pumpkin cheese stuffing: 300g pumpkin, 10g milk powder, 20g sugar, 10g butter, 100g cream cheese;
Method:
1. Make pumpkin cheese stuffing first: put steamed pumpkin + butter + milk powder + sugar into a non-stick pan and stir-fry over low heat until thick, then cool and mix evenly with softened cream cheese;
2. Put all the ingredients except butter and salt in the food processor, first select level 3 and beat at low speed for 2 minutes to form a mass without dry powder, then switch to level 6 and beat for 5 minutes to form a thick film;
3. Add softened butter and salt, wrap with dough, beat at low speed at gear 3 for 3 minutes until butter is fully absorbed, then turn to gear 6 and beat for 5 minutes to form a glove film;
4. Cover with plastic wrap and ferment the dough until it is twice as large. The fermented dough should not shrink or collapse when poked with a hand;
5. Divide into 8 portions after exhausting, roll into a ball, cover with plastic wrap and relax for 15 minutes, flatten and roll into a round shape, turn over and add pumpkin cheese filling, wrap it like a bun, pinch the seam, put it on a baking tray covered with wax paper, put a bowl of hot water in the oven to increase humidity, and ferment at 35℃ for 40 minutes until it is 1.5 times larger;
6. After fermentation, cover the surface of the bread with sifted flour, then cut the buns, preheat the oven at 170℃ and bake for 20 minutes, cover with a piece of tin foil when the color is satisfactory, and take it out to cool after baking.
