Green Plum Flavored Tiramisu
The traditional version of tiramisu is believed to have been eaten and cooked many times. Traditional tiramisu has some special ingredients. This version has plum dew jelly, which has a richer flavor~
Material
12 finger biscuits
Plum Dew Jelly Layer
Green plum dew 25g
Clear water 100g
Gelatine tablets (soak in cold water in advance to soften) 6g
Fine sugar
Mascarpone Sauce
2 egg yolks
30g caster sugar
Mascarpone cheese (return to room temperature in advance) 200g
Rum 3ml
Vanilla paste
Whipped cream 100g
Matcha Liquid
Matcha powder 3g
Warm water 70g
Step
Plum Dew Jelly Layer:
①Clean water + plum dew, boil (add or not add fine sugar according to sweetness), and cool to about 60°C.
②Add the soaked gelatin tablets and mix well
③Pour it into a container (I added plastic wrap for easy removal), about 0.6cm high, and put it in the refrigerator for later use.
Mascarpone sauce:
① Egg yolk + fine sugar, whipped.
②Boil a pot of water, heat sterilize over a small fire over water, and stir while heating until the egg yolk is fine and thick.
③Add rum and vanilla paste to the mascarpone cheese and beat until smooth.
④ Pour in egg yolk and mix well.
⑤ Beat the whipped cream, pour it into the mascarpone, stir evenly, and put it in a piping bag for later use.
Combination:
①Matcha powder + warm water, stir slowly with a tea pot to melt into a matcha liquid.
②Brush the matcha night on the fingerbread.
③Assemble in the following order:
Eclairs-Mascarpone Sauce-Eclairs-Plum Dew Jelly Layer (Remove in advance and defrost slightly)-Mascarpone Sauce
Keep it in the refrigerator for 4 hours (the taste is better after refrigeration, you can eat it in a hurry or not refrigerate)
④ Before eating, sprinkle a layer of matcha powder on the surface, and you can start it~
With the addition of plum dew jelly, the flavor has really improved a lot, and it is not incompatible with the flavor of mascarpone itself~ I am very happy to have tried this, and you guys should try it too~
