An apple pie is a pie in which the principal filling ingredient is apple. Although it is originated in England, it has become one of traditional and popular desserts in America today.
There is even an old saying about apple pie in America “As American as apple pie”, it always describe things representing best American cultures. Apples were an important food for the early American settlers and offered something different in daily meals. They were easy to grow and store for use throughout the year. Thus, the apple pie become a daily dessert as well.
Apple pie could be of various outlooks and tastes. Caramel apple pie, French apple pie, apple crumb pie, and sour cream apple pie are some common types.
But apple pie is often served with whipped cream, ice cream (“apple pie à la mode“), or cheddar cheese. It is generally double-crusted, with pastry both above and below the filling; the upper crust may be solid or latticed (woven of crosswise strips). The bottom crust may be baked separately to prevent it from getting soggy. Deep-dish apple pie often has a top crust only and tarte Tatin is baked with the crust on top, but served with it on the bottom.
To make an apple pie, we need ingredients including:
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 6 to 7 cups thinly sliced peeled tart apples
- 1 tablespoon lemon juice
- Pastry for double-crust pie
- 1 tablespoon butter
- 1 large egg white
- Additional sugar
Then follow the steps below:
- In a small bowl, combine the sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat.
- Line a 9-in. pie plate with bottom crust; trim even with edge. Fill with apple mixture; dot with butter. Roll remaining crust to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in crust.
- Beat egg white until foamy; brush over crust. Sprinkle with sugar. Cover edges loosely with foil.
- Bake at 375° for 25 minutes. Remove foil and bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cool on a wire rack.
