Matcha Milk Brick
There are so many types of cream bricks on the market, but now I still like this~ Matcha meringue with strawberry cheese sauce, the taste is delicate and smooth, and the aroma of thick milk~
I always think that the matcha matcha is strawberry. The bitterness of matcha matches the sweetness and sourness of strawberry. The two are not competing and merging with each other~
Ingredients
Matcha protein cake ingredients
4 eggs
Caster sugar 100g
Almond flour 30g
Vanilla extract 5g
Low-gluten flour 65g
Matcha powder 5g
Strawberry cheese filling ingredients
Cream cheese 200g
Strawberry jam 100g
Vanilla extract 2g
Gelatine slices 5g
Whipped cream 120g
Step
Matcha meringue
1 / Separate the 4 egg whites, take 3 egg yolks, 40g sugar, and vanilla extract into a basin and stir until thick (note that there are only 3 egg yolks).
2 / Add 4 egg whites into 60g of fine sugar in three times and beat with an electric whisk until it is dry and foamy.
3 / Pour the ⅓ egg yolk paste into the meringue and stir evenly. After completion, pour in the remaining egg yolk paste and continue to mix evenly. Be careful not to stir in a circular motion.
4 / Sift in the low powder, almond powder, and matcha powder and continue to mix evenly, and put them into the piping bag (add editor wx: zuibaking to unlock more food information).
5 / Line the baking pan with greased paper, and extrude the batter into strips (16.5cm square pan) along the diagonal of the baking pan.
6 / Put it in the preheated oven and bake at 180° for 12 minutes. After baking, take it out and cool at room temperature for later use. A total of two pieces are to be baked.
Strawberry cheese
7 / Pour vanilla extract and strawberry jam into the cream cheese melted at room temperature, stir until it is even and smooth, and adjust the jam according to your own taste.
8 / Add the gelatin slices soaked in cold water in advance and continue to stir (you can use the microwave to melt for 5 seconds in advance to make it easier to stir).
9 / If the coloring is not enough, you can add a proper amount of food coloring to adjust the color.
10 / Beat the whipped cream to 5 to distribute, pour it into the prepared strawberry cheese, and stir well.
Combination
11 / Take a 16.5cm square mousse ring and cut off the extra part of the matcha meringue cake.
12 / Pour the strawberry cheese sauce, smooth it gently, put the second omelet on the dough, press it evenly, put it in the refrigerator for more than 3 hours, take it out.
13 / After solidification, cut into suitable squares, then decorate with light cream, add strawberries to decorate, sift a layer of powdered sugar, and you’re done.
Tips
1) The amount of formula × 1.78 times, which can be converted into the amount of a 28cm gold plate
2) The amount of strawberry jam is adjusted according to the brand of your choice, the sweeter can be reduced
3) The quality of matcha powder determines the emerald greenness
4) Mousse has better taste in cold storage
